SHRIMP CREOLE ON RICE | |
4 tbsp. bacon drippings 1 lg. onion, chopped 1 clove garlic, minced 1 green pepper, chopped 1 bay leaf, chopped 4 tbsp. parsley, chopped 4 celery stalks, chopped 1/2 tsp. thyme 2 tsp. salt 1/4 tsp. pepper 1 (#2) can tomatoes 1/2 can tomato paste Melt drippings in skillet. Add other ingredients; cook 10 minutes. Blend 2 tablespoons of flour with 2 tablespoons water; add to mixture in skillet. Gravy should be fairly thick. To the gravy, add 4 pounds raw shrimp, shelled and cleaned. Cook until tender. |
