BROCCOLI FRITTATA | |
1 med. bunch fresh broccoli tops, chopped 7 eggs, beaten 1 white onion, chopped 8 oz. mushrooms, sliced 3 tbsp. butter 1 clove garlic, minced 1/3 c. Parmesan cheese Salt and pepper Steam broccoli until just underdone or microwave about 8 minutes. During this time, melt butter in deep 10 inch fry pan over medium heat. Add garlic, onions, and mushrooms. Saute a few minutes until onion is transparent. Combine cooked broccoli and beaten eggs. Pour into butter mixture in pan and stir a couple times to mix with onion and mushrooms. Sprinkle with salt and pepper. Cook uncovered for about 7 minutes. When the edges are brown and the top still soggy, sprinkle the cheese on top. Remove pan from stove and place under broiler for 3-5 minutes or until lightly brown on top. Cut into pie wedges and serve with sour cream or salsa on top. |
