BROCCOLI FRITTATA 
1 med. bunch fresh broccoli tops, chopped
7 eggs, beaten
1 white onion, chopped
8 oz. mushrooms, sliced
3 tbsp. butter
1 clove garlic, minced
1/3 c. Parmesan cheese
Salt and pepper

Steam broccoli until just underdone or microwave about 8 minutes. During this time, melt butter in deep 10 inch fry pan over medium heat. Add garlic, onions, and mushrooms. Saute a few minutes until onion is transparent. Combine cooked broccoli and beaten eggs. Pour into butter mixture in pan and stir a couple times to mix with onion and mushrooms.

Sprinkle with salt and pepper. Cook uncovered for about 7 minutes. When the edges are brown and the top still soggy, sprinkle the cheese on top. Remove pan from stove and place under broiler for 3-5 minutes or until lightly brown on top. Cut into pie wedges and serve with sour cream or salsa on top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
