BLACK EYED PEA SALAD | |
3 cans black eyed peas, drained and rinsed 1 jar diced pimiento, drained 1/2 c. diced purple onion 1/4 c. vinegar 1/4 c. plus 2 tbsp. red wine vinegar 1/4 c. plus 2 tbsp. sugar 1/4 c. plus 2 tbsp. oil 3/4 tsp. ground red pepper 1/4 tsp. pepper 1/4 tsp. salt Combine peas, pimiento and onion. Combine remaining ingredients and pour over vegetables. Toss gently and chill at least 3 hours. |
