BLACK-EYED PEA SALSA | |
1 (15 1/2 oz.) can black-eyed peas, rinsed and drained 1 (15 oz.) can black beans, rinsed and drained 1 (11 oz.) can Shoepeg corn, drained 1 1/3 c. mild salsa 3/4 c. chopped green peppers 1/2 c. chopped onions 1 c. medium salsa 1 (2 1/4 oz.) can chopped ripe olives, drained 1 jalapeno pepper, seeded and chopped 1 envelope Italian salad dressing mix 1 tsp. ground cumin 1/2 tsp. garlic powder tortilla chips In a bowl, combine first 12 ingredients. Serve with tortilla chips. Yield: 6 cups. |
