BLACK-EYED PEA SALAD 
1 (16 oz.) can black-eyed peas, drained
1 c. finely chopped celery
1/4 c. green onion, chopped
1/2 c. green pepper, chopped
1 tomato, chopped
2 c. lettuce, cut in long, thin strips
1 c. bottled cole slaw dressing

Mix all ingredients together; toss lightly. Serve immediately. Yields 6-8 servings.
