BLACK-EYED PEA SALAD 
1 can (16 oz.) black eyed peas, drained
1 c. finely chopped celery
1/4 c. chopped onion
1/2 c. green peppers, chopped
1 med. sized tomato, chopped
2 c. of lettuce, cut in long strips
1 c. coleslaw dressing

Mix all ingredients together. Toss and serve. (6 servings)
