PICKLED BEANS OR CARROTS 
5 qts. green or yellow beans
12 tbsp. sugar
6 c. water
Hot peppers or 1 1/2 tsp. cayenne pepper
Dill
Garlic
12 tbsp. salt
6 c. vinegar

Wash beans, leave whole. Put fresh dill in bottom of jar, 2 cloves garlic. Blanch beans 5 to 10 minutes. Put in cold water, drain back in jars. Heat liquid to boiling and pour over beans in jar. While hot, turn jars upside down to seal better. I mix beans and carrots in same jar, my family loves them.
