PEPPER RELISH 
4 c. onions, chopped
4 c. cabbage, chopped
14 green peppers, chopped
4 red sweet peppers, chopped
4 green tomatoes, chopped
1/2 c. salt
6 c. sugar
3 1/2 c. vinegar
2 c. water
1 tbsp. celery seed
2 tbsp. mustard seed
1 1/2 tbsp. turmeric

Combine vegetables and sprinkle with salt. Let stand overnight. In the morning, pour off liquid and rinse in cold water.

Combine remaining ingredients and pour over vegetables. Heat to a boil and simmer for 3 minutes. Place in pint jars and seal. Makes 8 pints.
