HOT PEPPER RELISH 
18 hot red peppers
18 hot green peppers
About 25 or 30 sweet peppers, depending on size (red, green, yellow)
4 lbs. onions
1 tbsp. salt
Boiling water

Leave seeds in hot peppers. Put peppers and onions through food chopper. Place in dish pan, add salt, cover with boiling water. Let stand 10 minutes. Drain and discard liquid. Put into kettle, add 1/2 gallon white vinegar and vegetables (peppers).

Bring to boil, simmering for 20 minutes.

Ladle into pint jars pressing down so liquid covers vegetables. Leave 1/2" headspace.

Process in a boiling water bath for 15 minutes.
