PEPPER RELISH 
6 med. bell pepper, cored, green or sweet red
3 med. onions
1 1/2 c. cider vinegar
2/3 c. sugar
1/2 tsp. salt

Chop peppers; slice onions. Cover with boiling water. Let stand 10 minutes then drain. Cook vinegar and sugar 1 minute. Add vegetables. Bring to a boil then simmer 10 minutes. Cool, then refrigerate. Makes 5 cups.
