MINT FRANGOS 
1 c. butter
2 c. sifted powdered sugar
4 sq. semi-sweet chocolate (melted)
4 eggs
1/2 tsp. peppermint flavor
2 tsp. vanilla
Vanilla wafer crumbs

Beat butter and sugar until light and fluffy. Add chocolate, beat. Add eggs, beat until fluffy. Add peppermint and vanilla. Sprinkle crumbs on bottom of cupcake liners. Spoon mixture into liners. Top with chopped walnuts. Freeze until firm. Top with whipped cream and cherry.
