ONE - STEP POUND CAKE 
2 1/2 c. unsifted all-purpose flour
2 c. sugar
1 tsp. orange or lemon rind
1/2 tsp. salt
1/2 tsp. baking soda
1 c. sour cream
1 c. butter, softened
1 tsp. vanilla
3 eggs

1. Preheat oven to 325 degrees. Generously grease (using 1 tablespoon shortening) and lightly flour a tube pan.

2. In large bowl, blend all ingredients at low speed until moistened.

3. Beat batter 3 minutes at medium speed. Pour batter into pan 4. Bake for 55-60 minutes or until toothpick inserted comes out clean.

5. Cool completely, glaze if desired while still warm.

GLAZE:

1 c. confectioners' sugar
1-2 tbsp. lemon juice

In small bowl blend glaze ingredients smoothly, spoon over warm cake.
