BUTTER SHORTBREAD 
10 oz. unsalted butter
1 lb. plain (Occident) flour
4 oz. caster sugar
Caster sugar for sprinkling

Beat butter until softened and smooth. Gradually work in flour and caster sugar. Knead lightly. Roll out to 1/4 inch thick each (no thicker). Bake at 400 degrees 15 minutes until barely pale golden. Sprinkle well with sugar and leave to cool before wrapping.
