BREAKFAST MUFFINS | |
1 3/4 c. sifted all-purpose flour 2 tbsp. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 c. buttermilk 1 egg, slightly beaten 3 tbsp. butter, melted In large bowl, sift together flour, sugar, baking powder, baking soda and salt. In medium bowl, combine buttermilk, egg and butter. Pour into flour mixture, stirring just until moistened. Spoon into greased 2 1/2 inch muffin cups, filling 2/3 full. Bake in 400 degree oven for 20 to 25 minutes. Remove from pan. Serve warm with butter or preserves. Can use paper liners. |
