SEAFOOD QUICHE | |
3 tbsp. butter 3 tbsp. minced green onions 1 1/2 c. cooked, diced shrimp, lobster or flaked crab or scallops 1 tbsp. tomato paste 3/4 tsp. salt Pinch tarragon Large dash cayenne pepper 3 tbsp. sherry 1 1/2 c. heavy cream 3 eggs 1/4 tsp. white pepper 1/4 c. grated Swiss cheese Melt butter in skillet, saute green onions 2 minutes, add seafood, cook 2 additional minutes, stirring constantly. Mix in tomato paste, half the salt, cayenne, pepper and sherry. Bring to a boil and cook over high heat 1 minute. Then cook approximately 10 minutes more at lower temperature. Beat the eggs, then add cream, pepper and salt. Stir in sea food mixture. Turn into pastry shell and sprinkle with cheese. Bake at 375 degrees approximately 25 minutes or until a knife inserted in the center comes out clean. |
