SEAFOOD QUICHE | |
2 tbsp. minced shallots 3 tbsp. butter 1/4 lb. (1 c.) diced lobster, crabmeat or shrimp 1/4 tsp. salt Pinch pepper 2 tbsp. Madeira or dry white vermouth 3 eggs 1 c. whipping cream 1 (8") pastry shell 1/4 c. grated Swiss cheese Cook shallots in butter. Add seafood and stir gently for 2 minutes. Sprinkle with salt and pepper and add wine. Boil for a moment and allow to cool. Beat eggs, cream and gradually blend seafood into egg mixture. Pour into pastry shell and sprinkle with grated cheese. Bake in preheated 375 degree oven for 25 to 30 minutes or until puffed and browned. Makes 4 to 6 servings. |
