BASIC CREAM PIE 
3/4 c. sugar
1/4 tsp. salt
3 egg yolks, slightly beaten
2 tbsp. butter
1/3 c. flour
2 c. milk
1 tsp. vanilla
9 inch pie crust

In saucepan, combine sugar, flour, and salt; gradually stir in milk. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes more. Remove from heat. Stir small amount of hot mixture into yolks; immediately return to hot mixture. Cook 2 minutes, stirring constantly. Remove from heat. Add butter and vanilla. Pour into cool, baked pastry shell.

Chocolate Pie: Add 2 (1 ounce) squares of chocolate or 6 tablespoons cocoa plus 1 tablespoon butter to flour and sugar mixture.

Banana Pie: Slice 3 bananas into pie shell and pour hot filling over them.

Butterscotch Pie: Substitute brown sugar for white and increase butter to 3 tablespoons.

Coconut Pie: Add 1 cup coconut to filling while it's cooking and top pie with 1/2 cup coconut.
