BASIC PIE PASTRY 
1 1/4 c. flour
1/2 tsp. salt
2 tsp. sugar
5 tbsp. cold unsalted butter, cut up
2 tbsp. cold solid vegetable shortening, cut up
2 tbsp. cold water, or more as needed

Sift together the flour, salt and sugar into a large bowl. Cut the butter and shortening into small pieces over the bowl, letting the pieces fall into the dry ingredients. Rub the mixture together with your fingertips, a pastry blender or 2 knives until the mixture resembles coarse crumbs; do not over mix. Sprinkle the cold water over the flour mixture, tossing with a fork all the while. Add more water if necessary, tossing with a fork, until the pastry can be gently gathered together into a ball. Do not make the dough too wet. Knead the ball once or twice in bowl to distribute the butter evenly. Gather together into a ball. Flatten into a dish, wrap and chill at least 1 hour before rolling out.
