BASIC PUDDING-PIE FILLING | |
1/3 c. flour 1/3 c. sugar 2 egg yolks 2 c. milk 1 tsp. vanilla ADDITIONS: 1 banana or 1 drained can crushed pineapple or 3 tbsp. cocoa (added with dry ingredients) or 1 c. shredded coconut Mix dry ingredients in saucepan. Make well in them with spoon. Place yolks in it; stir them and gradually add milk, stirring constantly. Cook over medium heat, stirring constantly until temperature comes to a slight boil. Pudding should then be thick so that stirring spoon leaves a mark (line) as it moves through pudding. Add vanilla and whatever flavors desired (ie. banana, pineapple, or coconut or combine all three with maraschino cherries and chopped nuts for a super mixed pudding). These can be used in a pre-baked or graham cracker pie shell for a pie. If making chocolate, put cocoa in with flour/sugar mixture at beginning. |
