CHICKEN SKILLET ITALIANO 
1 (8 oz.) chicken Rice A Roni
1 tsp. olive oil (Puritan)
2 1/2 c. water
1 tsp. basil
4 chicken breasts
2 c. broccoli
1 c. chopped tomato
1/2 c. Mozzarella

Saute rice in oil over medium heat until rice is slightly brown. Stir in water, contents of seasoning packet and basil. Top with chicken, bring to boil. Cover, reduce heat and simmer 15 minutes. Top with broccoli and tomato. Cover. Cook 5 to 10 minutes until liquid is absorbed. Sprinkle with Mozzarella cheese.
