CARROT CAKE WITH CREAM CHEESE ICING | |
2 c. all purpose flour 1 tsp. salt 1/2 tsp. nutmeg 4 eggs 3/4 c. firmly packed brown sugar 1 c. salad oil 2 tsp. baking soda 2 tsp. cinnamon Pinch of ground cloves 1 c. granulated sugar 1 tsp. vanilla 3 c. grated carrots 3/4 c. chopped walnuts Combine all dry ingredients, add oil gradually. Add eggs and vanilla. Fold in carrots and nuts. Bake at 350 degrees for 40 to 45 minutes. CREAM CHEESE ICING: 1 (8 oz.) pkg. cream cheese, softened 1 tsp. vanilla extract 3 c. confectioners sugar 1/2 c. finely chopped walnuts for garnish 1/4 c. butter 1/2 tsp. grated orange peel West Allis, Wisconsin |
