ARTICHOKE & SPINACH CASSEROLE 
1 stick butter
1/2 chopped onion
2 boxes chopped spinach
1 (14 oz.) can artichoke hearts
1/2 c. Parmesan cheese
1 pt. sour cream

Cook onion in butter and cook spinach and drain well. Drain and cut in quarters artichoke hearts and mix with sour cream and cheese with the above mixture. Sprinkle cheese (and slivered almonds if you prefer) on top and bake 30 to 35 minutes at 375 degrees.
