JAMBALAYA 
1 lb. smoked sausage, cut into slices
1/2 c. green onions, chopped
3-4 cloves garlic, chopped
1/4 tsp. pepper
1/8 tsp. cayenne pepper, ground
1 c. uncooked raw rice
1 lb. ground beef
1 med. bell pepper, chopped
1 (28 oz.) can tomatoes, whole
1/8 tsp. Worcestershire sauce
Creole Seasoning
1 1/2 c. water

Brown sausage in a skillet, drain the drippings, cut into 3/4 inch slices, then set aside. Combine beef, bell pepper, onions and garlic. Cook and stir beef mixture in skillet until brown, then drain grease. Add tomatoes, seasonings and sausage. Cover and simmer for 20 minutes. Add rice and water. Continue to cook, stirring occasionally until rice is tender, adding extra water as needed to prevent sticking.

You can also add seafood (shrimp, crab meat, etc.) as desired.
