IRISH CREAM MOCHA CHEESECAKE 
1 1/2 c. chocolate wafer crumbs
2 tbsp. sugar
1/3 c. melted butter
16 oz. cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1/4 c. chocolate syrup
1/2 c. Irish cream
1 tbsp. instant coffee
1 tsp. hot water
1 c. whipping cream, whipped
12 dark chocolate-covered Irish cream sticks

Combine crumbs and sugar in bowl, mix well. Add melted butter, stirring until well mixed. Press onto bottom and halfway up side of greased 9 inch springform pan. Chill in refrigerator. Combine cream cheese and condensed milk in bowl.

Beat until smooth. Add chocolate syrup and liqueur; mix well. Mix instant coffee and hot water. Add to chocolate mixture; mix well. Fold in whipped cream. Pour over crumb mixture. Freeze, covered, for 6 hours. Decorate with Irish cream sticks in spoke fashion. Yield: 12 servings.
