BROCCOLI CASSEROLE 
2 (10 oz.) pkgs. frozen broccoli
1 can cream of mushroom soup
1 c. mayonnaise
2 eggs, beaten
1 c. grated sharp cheese
Pepper to taste
4 tbsp. chopped onion
Crushed Ritz crackers for topping
4 tbsp. butter

Cook broccoli for 5 minutes in boiling salt water. Drain well. Combine soup, mayonnaise, eggs, cheese, pepper and onion. Mix well. Add broccoli and turn into greased 2 quart baking dish. Sprinkle with crushed Ritz crackers and dot with butter. Bake at 350 degrees for 30 minutes until it bubbles and browns.
