ZUCCHINI CASSEROLE 
2 lbs. zucchini squash, grated (or 3 med. squash)
1/2 c. mild onions, chopped
2 eggs, beaten
1/4 c. Wesson oil
1 tsp. salt
1/4 tsp. garlic powder
Black pepper to taste
4 slices day old bread, crumbled
1/2 c. mushrooms
Grated cheese to top

Mix all together, toss lightly, put in greased casserole. Spread grated cheese over top. Bake in moderate oven (350 degrees) about 45 minutes.
