BEEF AND SQUASH CASSEROLE 
1 lb. fresh squash
1 c. onion and green pepper
1 lb. lean ground beef
2 eggs (beaten)
2 c. cooked rice
1 can cream of mushroom soup
1/2 c. sour cream
1 tsp. salt
1/4 tsp. pepper
1 c. grated cheese
5-6 mushrooms (if desired)

Cook squash and onions in salted water for 5 minutes or until lightly tender. Drain. Cook green pepper and meat until brown. Stir in rice. Blend eggs, soup, sour cream and seasonings. Mix egg mixture, meat and squash. Place in 2 or 3 quart casserole dish. Top with cheese. Bake at 350 for 20 minutes. Serves 8-10.
