T'S CROWN JERKY | |
A dehydrator is handy for making jerky. 4 or 5 lb. eye of round beef roast JERKY MARINADE: 1 cup soy sauce 4 tsp. Worcestershire sauce 2 tbsp. apple cider vinegar 1 tbsp. liquid smoke 3 tbsp. light brown sugar 1 tbsp. hot sauce 1 tsp. red pepper flakes 1 cherry pepper, seeded and diced (with juice) 6 to 8 garlic cloves, smashed 1 tsp. onion powder 1 tsp. garlic powder 2 oz. Crown Royal (or your favorite Whiskey) Partially freeze roast for 2 to 3 hours for easy slicing. Trim fat and slice roast into 1/8-inch slices with the grain of the meat. Mix all ingredients in a mixing bowl. Place meat in Ziploc style gallon sized storage bag and pour marinade over the meat. Marinade in refrigerator overnight. Remove meat and let excess liquid drain off. Follow your dehydrator's recommendation for jerky and your desired dryness of the meat. Submitted by: Tom G. |
