BEEF VEGETABLE CURRY
2 lb. beef, cut into cubes
1/2 cup oil
2 medium onions, chopped
2 medium potatoes, diced
2 medium carrots, chopped
1 medium cauliflower, chopped
1/2 (16 oz.) bag frozen peas
1/2 tsp. chili powder
2 tsp. garlic powder
2 tsp. ginger powder
1 tsp. coriander powder
1 tsp. cumin powder
2 bay leaves
2 cardamon
2 cloves
2 small cinnamon sticks

Wash beef well and put in a strainer. Put oil in a Dutch oven and heat well. Next, put in the cut-up onions and sauté. When the onions become reddish-brown, mix in all the powdered spices in a little water and put in the pan. Now, put in the beef and after a few minutes, put in about 2 cups of water for meat to soften.

Once the beef looks soft, put in all the vegetables one by one with frozen peas at the end.

Now, when the curry looks done, put in the bay leaves, cardamom, cloves and cinnamon.

Your curry is ready to eat.

Note: The entire cooking process takes about 2 hours.
