STUFFED ZUCCHINI | |
2 lg. zucchini (15 to 17 inches long) 3 (16 oz.) cans canned tomatoes, drained 1 med. onion, diced 1/2 tsp. garlic salt 1/4 tsp. pepper 1 1/2 tsp. Italian spice 2 lg. boneless chicken breasts 1/2 lb. Cheddar cheese, grated Cut zucchini in half lengthwise, scoop out seeds. Place halves, cut side up on baking sheets. Mix tomatoes, onion, garlic salt, pepper and Italian spice. Spoon into zucchini "shells" until about 1/2 full. Cut chicken breast into chunks and spread over tomato mixture. Bake in 350 degree oven covered with foil 45 minutes. Remove from oven, remove foil. Sprinkle with grated cheese generously and bake uncovered 15 to 20 minutes. Slice crosswise to serve. Squash should be tender. |
