SPICY PUMPKIN CAKE | |
1 (2 layer size) pkg. size yellow cake mix 1 (8 1/2 oz.) can applesauce 1 c. canned pumpkin 3 eggs 1/4 c. milk 1 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. ground cloves 1/2 c. finely chopped, peeled apples 1/2 c. chopped nuts Preheat oven to 350 degrees. Grease and lightly flour a 13 x 9 x 2 inch baking pan; set aside. Combine yellow cake mix, applesauce, pumpkin, eggs, milk, cinnamon, nutmeg, and cloves; beat on low speed until well blended. Beat on medium speed for 2 minutes. Fold in chopped apple and chopped nuts. Bake at 350 degrees for 35-40 minutes or until toothpick comes out clean. Place cake on wire rack, cool thoroughly. Combine 1 cup whipped cream, 2 tablespoons honey, and 1/4 teaspoon cinnamon; beat until soft peaks form. Spread on top of cake. |
