ARTICHOKE CHEESE SOUFFLE 
1 can water packed, quartered, artichoke hearts, diced fine
2 c. Mozzarella cheese, grated fine
1 c. mayonnaise
1/2 c. Parmesan cheese
Garlic salt to taste

Stir all ingredients together; mix well after each addition. Bake in a greased 8 or 9 inch round or square baking dish. Bake at 350 degrees for 20 minutes. Serve with crackers; "Ritz" are best!
