OATMEAL PANCAKES 
1 1/2 c. oatmeal
3 tbsp. brown sugar
1 c. milk
1/2 c. flour
1/2 tsp. baking soda
1/2 c. buttermilk (or sour milk with 1 tsp. vinegar and let sit for 5 minutes)
2 tbsp. cocoa (optional)

Mix the oatmeal, brown sugar and milk together. Let this sit for 5 minutes. Add the rest of the ingredients and stir together. Pour 1/3 cup onto griddle at medium low heat (electric skillet at 300 degrees). This mixture is thicker than regular pancake batter and needs to be spread out a little. Cook until bubbly across the top and the edges start to look dry. Turn and finish cooking.

Makes 8 pancakes.

Recipe doubles well and the finished product freezes well, to be reheated in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
