LEMON RICE WITH PEAS 
1 sm. onion, finely chopped
4 tbsp. butter
1 1/2 c. rice
2 cans (10 1/2 oz.) chicken broth
1/2 c. water
2 tbsp. lemon juice
Salt to taste
1 (10 oz.) pkg. frozen peas

In Dutch oven saute onion in butter until onion is soft. Add rice and saute for 2 minutes, stirring. Carefully stir in broth, water, lemon juice and salt. Cover pan and simmer rice about 30 minutes or until rice is tender and liquid is absorbed. Stir in cooked peas and heat through. Serves 6.
