JAMAICAN JERK CHICKEN 
1 whole chicken, cut into 3" pieces
1 head garlic, chopped
1 tbsp. cloves, crushed
2 tbsp. pimiento seeds, crushed
2 tbsp. thyme
1 tbsp. hot pepper
4 pieces scallions, chopped
Salt to taste

Combine all the ingredients and marinate for 10 hours. Preheat oven and bake in a shallow roasting pan for 45 to 60 minutes at 350 degrees. Serve as appetizers with French bread.
