CURRY CHICKEN 
1 pkg. boneless chicken breast
4 tbsp. Jamaican curry powder
1/2 c. flour
1 tsp. fresh ground pepper
1/2 stick butter
2 cloves fresh garlic

Wash chicken; pat dry. Cut into thin strips, approximately 3 inches long each. Mix curry powder, flour, salt, pepper in bag. Place chicken strips in bag. Shake seasonings onto chicken strips.

Peel garlic, crush. Melt 1 teaspoon of butter in frying pan. Add 1 clove of garlic to melting butter. When melted completely, place chicken strips and cook until golden brown. Continue to add melted butter and garlic to frying pan until all chicken is cooked.

Gravy: When all pieces are cooked and removed from pan, add 1 cup of water to pan. (Do not remove pan drippings.) When boiling, add chicken pieces and simmer 3-5 minutes. Serve over bed of rice.
