CHERRY COBBLER | |
6 c. sweetened "Door County Cherries" 1 tbsp. cornstarch or tapioca 4 pats of butter Preheat oven to 400 degrees. Mix cornstarch or tapioca and cherries. Pour into medium size casserole or baking dish and dot with butter. Put into oven until bubbly. Meanwhile, prepare dumplings: 1 tbsp. sugar with a dash of nutmeg 2 tsp. baking powder 1/4 c. shortening 1/2 c. plus 1 tbsp. sour cream 1/4 tsp. salt Combine dry ingredients and cut in shortening with pastry blender until crumbly. Stir in sour cream and mix with fork. Remove pan of cherries from oven and drop small spoonfuls of dough on top. Bake 30 minutes, or until dumplings are slightly brown. Test center ones for doneness. Serve warm or cold with pouring cream. |
