PORK ROAST & YAMS 
4 lb. boneless pork roast
4 sweet potatoes
1 lg. onion
Salt & pepper to taste

In large roasting pan, sprinkle roast with salt and pepper. Add onion slices, then place sweet potatoes around roast. Bake at 350 degrees for 3 to 3 1/2 hours until tender. When ready to serve, remove meat and yams to serving platter. Thicken meat stock with 1 to 2 tablespoons cornstarch dissolved in warm water. Serve as gravy. Regular potatoes can be used in addition to or in place of yams.
