PICKLE RELISH 
4 c. ground unpeeled cucumbers
1 c. ground green pepper
1/2 c. ground red pepper
3 c. ground onion
3 c. finely diced celery
1/4 c. coarse salt
3 1/2 c. sugar, white
2 c. white vinegar
1 tbsp. mustard seed
1 tbsp. celery seed

Combine all vegetables in large bowl. Sprinkle with salt. Cover with cold water; let stand 4 hours. Drain thoroughly in colander. Press out all water.

Combine sugar, vinegar, celery and mustard seeds. Bring to boil, stirring until sugar is dissolved. Stir in drained vegetables. Simmer 10 minutes. Pack into jars, leave 1/2 inch on top. Process in boiling bath for 10 minutes. 5-6 pints.

This is definitely a SWEET pickle relish. Flavor is good. We used a food processor to make the "ground" veggies and evidently it ground them too finely because the end result was only 3 1/2 pints. Suggest recipe read, "finely chopped" instead of ground. The sugar, vinegar, celery and mustard seed base also is really good for canning banana pepper slices to make peppercini's.
