SWEET PICKLE RELISH 
2 qt. ground cucumbers
1 qt. ground onions
1/2 c. salt
Ice cubes
Few drops green food coloring
2 3/4 c. sugar
2 3/4 c. white vinegar
2 tbsp. mixed spices tied in a bag

A small amount of grated carrots or red peppers may be added for color.

Mix the ground cucumbers and onions and place in a colander to drain. Sprinkle with the salt, cover with ice cubes and let stand at least 1 hour or overnight. Squeeze out the excess juice. Rinse with cold water and drain well.

In enamel kettle put the sugar, vinegar, food coloring and spices. Bring to a boil. Add drained cucumber mixture and reheat to boiling. Pack in hot pint jars and seal.
