BLACK-EYED PEA AND CORN SALAD 
2 (15 oz.) cans black-eyed peas
1 (15 1/2 oz.) can corn
1 (4 oz.) jar chopped pimento or 1/2 c. chopped red pepper
3 or 4 green onions, sliced
1/3 c. chopped cilantro
1/4 c. corn oil
2 tbsp. cider vinegar
1 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper

Makes 10 (1/2-cup) servings.
