SPINACH WITH RICE 
2 pkgs. frozen chopped spinach
2 tbsp. butter
1 lb. ground beef
1 sm. onion, chopped
Salt & pepper to taste
1 c. cooked rice

Thaw the spinach and squeeze out excess water. Place in a pan with the heated butter and saute for 5 minutes. Transfer to a bowl and set aside.

In a large pan, brown the meat and onion in the butter. Stir in the salt & pepper. Lightly grease a Pyrex dish and spread the cooked rice over the bottom. Cover with the spinach. Top with beef. Bake at 350 degrees for about 15-20 minutes or until heated through.
