CHICKEN A L'ORANGE 
4 sm. chicken breasts, skin removed
1 1/2 tbsp. butter
Salt, pepper, paprika
1 med. onion, sliced
1 c. fresh mushrooms, sliced
2 carrots, thinly sliced
1 tbsp. brown sugar
1/4 tsp. ground ginger
1 c. orange juice
1 tbsp. flour

Spray large skillet with non-stick oil coating. Sprinkle chicken with salt, pepper and paprika to taste. Saute chicken in butter about 10 minutes on each side until lightly browned. Remove chicken.

Saute onions and mushrooms in same pan about 5 minutes until onion is transparent but not brown. Place chicken in casserole with onion mixture and carrots.

Blend flour, sugar, ginger and orange juice. Stir over medium heat in saucepan until mixture thickens. Pour over chicken. Cover and bake at 350 degrees 1 hour. Remove cover and bake at 450 degrees 10 minutes. Serves 4, about 265 calories per serving.
