CHICKEN ALA MARTA | |
3/4 c. Italian seasoned fine dry bread crumbs 1/4 c. grated Parmesan cheese 6 whole chicken breasts, skinned, split and boned (or thighs) 1/2 c. sliced green onion 4 tbsp. butter 4 tbsp. flour 2 c. milk 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained 2 (4 oz.) pkg. boiled ham slices, diced Combine bread crumbs and cheese; coat chicken lightly. Arrange in 9x13 inch baking dish. Cook onion in butter until tender. Blend in flour; stir in milk all at once. Cook until thickened. Cook and stir 1 minute more. Stir in spinach and ham. Spoon spinach mixture over chicken; sprinkle with remaining crumb mixture. Bake, uncovered, in 350 degree oven for 40 to 45 minutes. Serves 12. |
