OLD FASHIONED KIDNEY BEAN SALAD | |
1/3 c. mayonnaise 1 tsp. prepared mustard 1 med. size onion 1 c. celery, thinly sliced 1 sm. cucumber, diced 2 (1 lb. each) cans red kidney beans, drained 4 hard cooked eggs Seasoned salt Mix mayonnaise, mustard, finely chopped onion, celery and diced cucumber. Fold in drained kidney beans and eggs, cut into eighths. Season to taste with seasoned salt. Chill 2 to 3 hours until flavors are blended. Serve on lettuce and garnish with tomatoes or cucumber if desired. Serves 6. |
