APPLESAUCE BREAD 
2 c. unsifted flour
1 tsp. ground cinnamon
1/2 c. quick rolled oats
1/2 tsp. lite salt
1 tsp. baking soda
5 lg. egg whites
3/4 c. firmly packed brown sugar
1/3 c. milk
1 c. unsweetened applesauce
1 tsp. vanilla extract

1. Grease 12 x 4 1/2 loaf pan. In medium size bowl, mix flour, oats, cinnamon, baking soda and salt. Set aside.

2. Heat oven to 325 degrees. In large bowl, beat egg whites and brown sugar for 2 minutes. Stir in applesauce.

3. Mix milk and vanilla in measuring cup. Add to egg white mixture alternately with flour mixture, mixing until just combined. Pour into loaf pan.

4. Bake 55 to 65 minutes or until tooth pick comes out clean.

5. Cool in pan 10 minutes, then remove from pan and cool on wire rack. Cool completely before slicing. Sprinkle with powdered sugar if you wish.
