ZIPPY STEAK AND GRAVY 
1/4 c. flour
1/8 tsp. salt
1/4 tsp. pepper
4 cubed beef steaks, about 1 1/3 lbs.
1/4 c. vegetable oil
1 (10 oz.) can diced tomatoes with chilies, undrained
Hot cooked rice or noodles

Combine flour, salt and pepper in a plastic bag. Add steaks one at a time; close bag securely and shake until well coated. Brown steaks on both sides in hot oil. Drain all but 1 tablespoon dripping from pan. Pour tomatoes and chilies over steaks. Bring to a boil; cover and reduce heat. Simmer 15 minutes or until steaks are tender. Serve over hot cooked rice or noodles. Make 4 servings.
