CHICKEN GUMBO 
1 fryer, cut up
1 can whole tomatoes
1 lg. onion
3 pods garlic
1 stalk celery
1/2 c. flour
1/2 c. cooking oil
Salt and pepper or Creole seasoning to taste

Saute chicken until lightly browned. Add all seasoning and saute until tender. In a separate skillet, add oil and flour. Cook until it becomes a rich brown color. Add to chicken and seasoning mixture. Cook approximately 1 hour. Okra may be added, if desired.
