CARROT CUCUMBER RELISH 
4 to 6 unpared cucumbers (coarsely ground - 3 1/2 c.)
6 med. carrots (coarsely ground - 1 1/2 c.)
2 med. onions (coarsely ground - 1 c.)
2 tbsp. canning salt
Green pepper (if desired)
2 1/2 c. sugar
1 1/2 c. vinegar
1 1/2 tsp. celery seed
1 1/2 tsp. mustard seed

Combine ground vegetables, stir in salt. Let stand for 3 hours. Drain well. Combine remaining ingredients and bring to a boil. Add vegetables, simmer uncovered for 20 minutes. Seal at once in hot sterilized jars.

Makes 2 1/2 pints. Very good on hamburgers, hot dogs, in potato salads, macaroni salads, meat loaf, baked beans, tartar sauce - the list goes on!
