VENEZUELAN POOR MAN'S FILLET
MIGNON
 
1/4 c. soft bread crumbs
1/4 c. evaporated milk
1 tbsp. onion, chopped fine
1 1/4 lb. ground beef
2 tbsp. ketchup
1 tsp. salt
1/4 tsp. pepper

Soak bread crumbs in milk until soft. Add remaining ingredients except bacon and mix thoroughly. Shape into 8 patties about 3 inch in diameter. Wrap each with a slice of bacon around sides. Fasten with several toothpicks.

Heat ungreased frying pan over medium heat for 3 minutes; reduce heat to low. Place patties in pan brown on both sides. Remove and place in baking dish and bake at 350 degrees for 10-15 minutes until bacon is crisp.

Extremely good. Will do again, but... The recipe doesn't really specify how much bacon. And the directions for browning the patties didn't really work. So, I'd suggest you keep the frying pan a little hotter until the patties are brown. Also, the patties were too short to just wrap a piece of bacon around it. So, we had the bacon folded over & then wrapped around. The bacon didn't get done. So, you could try less bacon somehow, or you could partially cook the bacon before wrapping it.
